Ingredients
1 cup (80g) quick or old fashioned oats (not steel cut)
1 ½ cups (360mL) water
1 scoop (33g) Ascent Vanilla Protein Powder
½ cup (60g) flour (all purpose, wheat, gluten free, etc)
1 tsp. Baking powder
¼ tsp. Salt
½ tsp. Pumpkin pie spice
1 cup (240g) pumpkin puree
1 whole egg
2 egg whites (or another whole egg)
½ tsp. Vanilla extract
Sweetener to taste (I used ¼ cup granulated stevia)
2 tbsp. Chocolate chips
INSTRUCTIONS
Add oats and water to a large, microwave safe bowl. Microwave on high for 1:30. Stir, and microwave for another 60 seconds.
Add cooked oats, pumpkin, egg whites, egg, and vanilla extract to a large bowl. Stir until combined. Add dry ingredients: protein powder, flour, baking powder, pumpkin pie spice, salt, and sweetener. Mix until a smooth batter is formed.
Spray a small glass loaf size dish (7x5 inch) with nonstick spray. Add the batter to the dish. Sprinkle the top with chocolate chips and walnuts.
Bake at 350F for 25-30 minutes or until a knife comes out clean. Let cool then cut into 4 bars and enjoy!
